Onion Soup


1 tablespoon butter
3 large onions, sliced
3 tablespoon flour
1 pint boiling water or stock
1 quart scalded milk
3 boiled potatoes that have been mashed
chopped parsley


Fry 3 large sliced onions in 1 tablespoon butter, until soft. Put in 3 tbsp flour, stirring until well cooked. Slowly pour in 1 pint boiling water or stock. Mash 3 potatoes which have been boiled and over them pour slowly 1 quart scalded milk. Then put this into the onion mixture, stirring thoroughly. Serve very hot with croutons and a sprinkling of chopped parsley.
